Happy Thursday, y'all! We're back with another episode of #healthybakingforAdam! This week, I had my mind on chocolate and chocolate on mind. But instead of reaching for butter and sugar, I reached for almond butter and honey and made these paleo brownies for me and my not-so-baby brother!
They.were.awesome. He couldn't even tell they were healthy! I was afraid the almond butter might be overpowering since it's the main ingredient, but not at all. The rich, chocolatey goodness shined through in every delightful, chewy bite!
These are definitely going to be a regular in our house from now on. We may have to start making our own almond butter since it can get pricey, but in terms of simplicity, these are ridiculously easy to whip up and satisfy our chocolate cravings!
Paleo Brownies
Yield: 16 brownies
Ingredients:
8 oz. almond butter
1 egg
1 teaspoon vanilla extract
1/2 cup honey
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
Directions:
Preheat oven to 325 degrees F. Spray an 8 x 8 inch glass baking dish with non-stick cooking spray and set aside.
In a medium-sized bowl, using an electric hand mixer, beat almond butter until smooth and creamy. Add egg, vanilla, and honey, and beat until incorporated. Add cocoa powder, baking soda, and salt, and beat until well combined. Batter will be fairly thick.
Spread batter into prepared baking dish. Bake for 20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. (You want to err on the side of underbaking these)
Brownies are best when warm. Store covered at room temperature.
